This course provides lectures on the regulations in place in the United States regarding chemical contaminants in foods and theoretical and hands-on practice of FDA-recommended fit-for-purpose laboratory methods. Liquid and gas chromatographic methods are presented for the quantitative and confirmatory determination of triazines, furans, and acrylamide in foods. Materials and techniques of sample preparation will be reviewed and practiced for foods with different lipid content. Participants will learn how to implement these methods in their own laboratories through expert instruction and hands-on laboratory training.

Methods of Determination for Drug Residues in Fish, Meat, and Poultry

This course provides lectures on the regulations regarding veterinary drugs in fish, meat and poultry, as well as, theoretical and hands-on practice of fit-for-purpose laboratory methods. Subject-matter experts from the U.S. FDA and USDA will support instructors from the University of Maryland JIFSAN both in classroom lectures and practical exercises in the laboratory. Focus will be placed on liquid chromatographic methods for the quantitative and confirmatory determination of veterinary drugs such as nitrofurans, crystal violet, leucocrystal violet, leucobrilliant green, chloramphenicol and fluoroquinolones.
